Grilled Roasted Vegetables


I love to make these because they are super easy, healthy and a great substitute to eating starches all the time. You can use virtually any veggies that you like with a little adjustment of cook time.
INGREDIENTS:
1 -2 packages white mushrooms
2 purple onions
1-2 green peppers
1-2 red peppers
1-2 yellow peppers
Vegetable oil spray
Salt and pepper to taste
1-2 teaspoons of garlic and herb seasoning
INSTRUCTIONS:
You will want to wash and cut your veggies first and cut them up in big chunks except mushrooms which can be left whole. There’s no wrong way to cut them.
You will need a cookie sheet lined with aluminum foil. Spray the foil with some oil and add the veggies. Spray top of vegetables again and add seasoning. Mix around. That’s it they are ready to cook. Both things take same temperature on a preheated grill 250-350f cook veggies for 20-30 mins or until soft. They are delicious with a nice kick of garlic and herbs from the seasoning.
