Mango Jalapeno Chicken Wings



So this was literally the first time I had ever made these so I had to play around to get the flavor and consistency I liked and ended up with extra sauce that I froze for later use. Try it and let me know what you think?

INGREDIENTS:
4 lbs chicken wings

For the Sauce:
1 package frozen mango pulp (mine was sugar free)
2 ripe mangos
4 jalapenos skins charred
1/2 lime using only the juice of
4 garlic cloves whole
1 cup sugar (if your pulp has sugar omit 1/2 cup of sugar)
1/4 cup maple syrup
1 tsp tumeric for color
3 cups water (2 1/2 for blender and 1/2 cup for cornstarch slurry)
2 tsp cornstarch for thickening
2 Tbsp oil

Chicken Wing Seasoning:
Salt and pepper to your liking
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp adobo powder with pimenta (pepper)
1 Tbsp tio santi all purpose seasoning or any kibd of all purpose seasoning.
3 Tbsp flour

DIRECTIONS:
* If you have a gas stove add your jalapeno to the open flame charring all sides. If not you can do same in a fry pan. Remove the stems only.
* Cut up mangos and peel garlic but leave it whole.
*Add your mango pulp, mangos, jalapeno, sugar, syrup, tumeric and 2 1/2 cups water to blender and blend well. You should end up with roughly 5 cups liquid.
* Now grab a frying pan something deep enough for all your sauce. Add oil heating it on high and add liquid from blender stirring on high heat frequently about 30 minutes it should be the consistency of apple sauce.
* In small bowl add the reserved 1/2 cup water and cornstarch mixing it well. Add this to your liquid on stove and stir until sauce thickens. Remember it will thicken fast so you need to constantly stir. When done it will look like jelly. Turn off the heat and set aside.
*Now in large mixing bowl add wings, flour and all chicken wing spices mixing it thoroughly.
* In another pot add oil enough to fry the wings about 1/2 way if using a 4 quart pot and heat on high.  Remember this is alot of chicken so the frying will need to be done in batches. The idea is to not over crowd the pot but to put enough in so it doesn't take forever. Each batch will take about 20-30 minutes.  Remove 1 or 2 from each batch to check for doneness.
* When all are fried now add them to your mango sauce and mix them around. No need to mix on heat the sauce is fine like that but if you want the sauce hot by all means heat it all together for a few minutes and serve.
