Pan Roasted Corn


So I had about 3 ears of corn sitting in my fridge that desperately needed to be used but with today’s temperature around 95 I wasn’t exactly about to go run outside to grill it when I could cook inside with my air conditioner. This was quick, easy and best of all yummy.
INGREDIENTS:
3-4 ears of corn or 1 bag frozen (thawed)
1 purple onion thin sliced in squares
1/2 teaspoon chili powder
1/4 teaspoon salt
Black pepper to taste
1 tbsp lime juice
2 tbsp oil
INSTRUCTIONS:
In fry pan add oil heat on medium heat if using corn on the cob cut off corn or if using frozen make sure it is thawed. Add corn, onion and all spices and fry until soft and light brown usually 15 minutes. When done add lime juice and mix well. All done, wasn’t that easy?
