Pinchos de Pollo/ Chicken kebabs

My mouth is watering just looking at this picture but they tasted even better last night. Easy to do and easy to make.
3 lbs boneless skinless chicken thighs
2 teaspoons oil
3 packets goya sazon
2 teaspoons adobo powder with pepper (pimento)
2 teaspoons oregano
1 teaspoon garlic and herb powder
BBQ sauce for basting
Cut your chicken into chunks fairly big think kebabs sized. Once all cut add chicken, spices and oil in a plastic bowl and mix thoroughly. Let sit in refrigerator for a couple hours or cook right away like I did last night is up to you.
Start adding to your skewers. I have metal skewers it just makes life much more easier as fas as no burnt sticks and easy on and off of stuff. My recommendation if using the wood ones is pre-soak them in warm water at least 20 mins and after adding meat wrap the ends in aluminum foil so they stay intact.
Time to start cooking. I also made some roasted veggies I’ll post that recipe next.
Preheat your grill I can’t stress that enough. You want a high enough heat to cook thermometer should be between 250-350f. Chicken should take about 30 mins at that temp turning every 10 mins or so. If in doubt grab a piece in the middle and rip open to check. If done add your bbq sauce to baste amount depends on you usually i just squirt some on and rub around then flip and repeat. Let cook an additional 5 mins per side after sauce is added.
This picture above is your finished product. Pair with roasted veggies or rice with beans or even mashed potatoes. Be prepared to be blown away by the flavor.
