Corn Chowder

10 large potatoes peeled and cubed
1 large onion cut in quarters then sliced
3 stalks celery sliced
1 package bacon
1 can corn
1 can creamed corn
1 qt half and half
1 stick butter
1/4 c flour
Salt and pepper to taste
1/4 c Chicken consume
1 Tbsp thyme
1 Tbsp paprika

* Peel and cube potatoes usine a 6-8 quart soup pot put potatoes inside and put water just enough to cover the potatoes. Cook on high until fork tender.
* cut onions and celery set aside
* cut bacon in small pieces
* in a fry pan start cooking bacon until slightly crispy remove from pan and place on paper towel lined plate.
* empty all but a enough bacon grease to fry onions and celery with. Fry onions and celery sprinkle with salt and pepper to taste. Fry until translucent. Turn off fry pan.
* if potatoes are done add both cans of corn and onions and celery. Also add all the half and half and stir well keeping it on high.
* now using same fry pan add entire stick of butter melting it on medium heat. When melted add flour and more salt and pepper to taste. Make a rue or a paste that you will now add to the pot to thicken the soup.
* add consume, thyme and paprika.
* keep stirring it until all the rue mixture is mixed into the soup. Taste and adjust salt and pepper and consume to your taste.
