Potato Donuts

1/4 c shortening (melted lard)
1 c sugar
1/2 tsp salt
2 eggs
1 c hot mashed potatoes
1 c sour milk ( make sour by adding 1 Tbsp apple cider vinegar to 1 c milk)
4 c flour
3 tsp baking powder
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp baking soda
3-4 lbs lard for frying

1. Cream shortening, sugar, salt and eggs.
2. In seperate bowl add and mix all dry ingredients set aside.
3. Add potatoes, sour milk and dry ingredients to creamed shortening mixture stir well. Refrigerate mixture for a couple hours. The dough will be sticky so you should sprinkle with flour to handle it better.
4. Roll out on floured surface to 1/2 inch thick. Cut out with donut cutter. ( don't throw away the middle you can fry those also for donut holes).
5. Deep fry in lard heated to 365-375 on thermometer until golden brown on each side and they float to top.
Want to eat plain go ahead or toss in cinnamon and sugar mix for some sweet.
