Chicken Pozole

So what is pozole its a Mexican stew but more specifically uses hominy which is a type if corn but for me has a really nice taste. There is a red version and a green version. You can use pork or chicken. So without further ado here's my recipe:

2 chicken breasts
1 onion quartered
1 carrot sliced
1-2 stalk celery sliced
8 whole garlic cloves
Handful of cilantro
2 15oz cans hominy
8 cups water
1/2. Chicken consume give or take
2 bay leaves
1 Tbsp oregano
6 chili ancho
6 chili guajillo
2 chili arbol
Optional toppings: shredded muenster cheese, sour cream, tortilla strips, avocado etc.

* Put all ingredients with water to boil except chilis on medium heat for now and while it is on take your chilis and remove stems and seeds from them and add into soup pot with everything else.
* When chicken is cooked through after about 30 minutes remove just chicken and shred it and add back in.
* When chilis are soft remove all chilis and garlic cloves with a little water and blend until like a paste. Add this back into the soup this will give it's color.
* That was the last step since your chicken is cooked already. Just remove bay leaves before serving and enjoy with your favorite toppings.
